Cooking Lesson #1


Alrighty, for those of you who don't know me very well.. One of my least favorite things in this world (and I mean least) is cooking. I know, I know.. As a wife now that's not good. I told myself once we moved into Seattle & Jesse started his job, I would have tons of time on my hands to teach myself.

Well......... It's not that easy.

So, Jesse (being the absolute wonderful cook that he is), cooks most of the time. Unless we're talking boil the water, toss the noodles in & add sauce, I'm useless. Well that's not completely true. I know a few things but the point is I want Jesse to be able to walk through the door after a long day at work and me have dinner (a good & healthy dinner) all ready & waiting for him. Therefore, I am starting a new thing where I am going to blog about the recipes I watch him & help him cook. This way I have to 1. think about for longer than just while he is doing it & 2. I will now have a spot to go back to, for me to get the recipes from or even just remember things we have cooked in the past to make again.

Here goes...

This recipe specifically we (as in he) completely made up.

Ingredients:
Garlic
Cauliflower
Green peppers 
Red peppers
Onions 
Bok Choy 
Steak 
Ginger 
Coconut Oil
Butter
Beef Curry Seasoning
Lemon pepper
Celery salt 
Poultry seasoning 
Olive oil

Prep everything. 

1. Wash and chop all the veggies

Cauliflower, onions, red & green peppers

Types of Cutting 
Julianne- Slice thin and long 
Chop- Cut into more or less bit size pieces 
Dice- Cut into tiny squares 


The wok is very thin so it heats very quickly. Start slow- Med to med high. 


Put the coconut oil in (about two tablespoons). A little butter. Watch how quickly the coconut oil melts. That will tell you how hot the wok is. 

Put the meat in. Listen for the noise. Stir it around. 


Season the meat with Chile powder and ginger, salt and pepper. Just trying to brown the meat for now. Not cooking all the way



Now that we have this delicious brown broth we will take the beef out & add in other ingredients.



 Add the onions into it to caramelize. 
We want to cook these down to wear they are transparent. Onions are a fundamental flavor builder. 


Add garlic.. It only takes about 30 seconds.

 Add the curry. Mash up the curry after adding it. 


Add the coconut milk (2-3 cups).



Let the mixture start boiling. 
Keep the heat up. 

Once your mixture is boiling, toss in the cauliflower and peppers 

Add lemon pepper, celery salt, poultry seasoning, and some olive oil. 

Stir. Cover. Simmer. 15-20 minutes. 

In the mean time, chop up some green onions. 



When the cauliflower is soft enough for you, add & mix the meat back in. 




Put the bok choy on top. Do not mix it. Let sit onto to steam. 


Once the bok choy is all wilted, it's done! :) 

Top the dish with some onions & it's ready to eat!

We did it & it was delicious!
